So how did we get into food blogging in the first place? I’ve always told myself I would NEVER have a job that involved creative writing. And here I am with a darn food blog.
As I turned to clean eating, I began following a variety of health food blogs to discover new ingredients and learn how to re-vamp my diet. There are a ton of amazing health food bloggers out there. However, I found I couldn’t relate to many of their lifestyles (living on a farm and growing your own organic food sounds splendid- but I live in NYC). It kind of made the whole clean eating thing seem unrealistic.
Then I came across The Diva Dish and it truly changed my perspective on “food bloggers.” She’s a ‘real’ person that you can relate to. She has awesome recipes and she’s freaking hysterical. Around that time I also discovered the Clean program and participated in my first cleanse with Alyssa. We figured it might be fun to try and make a blog about cleansing and clean eating, making sure we were also ‘real,’ and ‘relatable.’ A few months later and here we are!
I continue to browse my favorite blogs for inspiration. The Diva Dish has these Hint of Lime Kale Chips (I used to have a small obsession with Hint of Lime Tostitos) that looked like the perfect healthy snack. Because I had just bought pre-washed, pre-cut kale from Trader Joe’s these chips literally took about 12 minutes to make, and that includes baking time!
- Chopped kale, no stems (I love Trader Joe’s cut and washed kale!)
- Olive oil
- Sea salt
- Juice and zest of 1/2-1 lime (depending on the amount of kale you use)
- Preheat oven to 350 degrees.
- Lightly coat kale in olive oil and lime juice. Sprinkle sea salt and lime zest.
- Spread kale on a baking sheet covered in parchment paper and bake for 10 minutes until crispy.
