Lemon Celery Smoothie

I’ve been on a celery kick lately. Besides brussels sprouts, (I freaking love brussels sprouts) celery seems to be one of the veggies that actually fills me up. This is most likely due to its richness in fiber. I often pair celery with almond butter or hummus for a clean yet filling snack. It used to be blue cheese… but that had to go.

This Lemon Celery smoothie is light and refreshing, with a hint of sweetness. :)

Lemon Celery Smoothie

Ingredients
  1. 1 celery stalks, chopped
  2. 1/2 cucumber, sliced (frozen)
  3. 1/2 apple, chopped
  4. 10oz almond milk
  5. 1 packet of stevia (add to taste)
  6. 1/2 freshly squeezed lemon juice
  7. 1 tablespoon chia seeds
Instructions
  1. Add all ingredients to a blender and blend.

    This makes one large smoothie! Great for a dinner replacement. If you want something smaller I would keep the almond milk at 3/4- 1 cup and reduce the fruits and veggies that go in.
